Jalapeños are a group of chiles which borrow the name from the town where they were first sold, Xalapa, in México. Its origin is not that clear although it may come from the nearbies counties. Within this group we may find "frienza", the earliest one, or the TAM, with a smooth heat. The "fresnos", the "jalaros", the "Santa Fe grande", los híbridos "Señoritas" or those devoloped by the NUMEX, in USA: "Piñata".

The jalapeños' level of heat varies ranges from 2,500 to 10,000 SHU. The plants are around 60 cm. high, whit around 30 fruits per harvest. Its form is cylindric, ending with a rounded cone. Many of them have clear. They are dark green and mature into dark red. Since they are very fleshy they do not dry well. That is why they are usually smoked, receiving the name of "chipotles".

If pickled they offer a tasty note of flavour to sandwiches, sauces and shellfish dishes such as for example jalapeño with crab and avocado. If fresh they are delicious as appetiser filling them up with cheese or added to sauces. Finally, when roasted, they may be used over the nachos, sauces, pizzas, burritos or tacos. Asians use them in their curries and vegetable soups. However, they reach its maximum when smoked. We may prepare such dishes as chicken with chipotle, tlalpeño soup or mashed potatoes with chipotles.
